Carie’s Healthier Rhubarb Cake

350° oven 

Cake Mix 

½ cup applesauce 

3/4 cup brown sugar 

2 large eggs 

1 ½ tsp. vanilla 

1 ¼ cup whole wheat flour 

¼ cup bran 

2 tsp baking powder 

¼ tsp salt 

1 cup Greek yogurt 

¼ cup skim milk 

Crumb Topping 

½ cup whole wheat flour 

1/3 cup brown sugar  

1/3 cup oatmeal 

3 Tbsp. butter 

½ tsp. cinnamon 

Rhubarb 

3 cups fresh Rhubarb, cut into ½ inch pieces 

2 tsp orange juice 

1 tsp orange zest 

Instructions 

1. Toss Rhubarb with OJ and zest; set aside 

2. Mix together dry ingredients of cake. Mix together wet ingredients of cake. Combine slowly, mixing completely. 

3. Mix together dry ingredients of crumb topping. Cut cold butter into mixture.  

4. Grease 9×9 pan. Pour cake batter into pan. Pour rhubarb mixture on top. Sprinkle crumb topping on top. Bake 45 mins at 350° F, or until a toothpick inserted into the center comes out clean.
